This week's recipe, Fluffy Gluten-Free Pancakes and Crushed Berry Syrup, is from Kristin O'Connor, founder of Nourish This.
Gluten-Free has never tasted so good! These pancakes are so easy to make and make for super leftovers when topped with nut butters or jam. The Crushed Berry Syrup is full of nutrients, lower in sugar than traditional syrup and makes for an irresistible pancake topping!

Thanks for sharing the wonderful recipes - I’ve been living off GF crepes but it’s nice to having something a bit thicker and chewy once in a while!
Here’s my recipe for Crepes in case you’d like to try them:
1 cup sweet rice flour
1 cup milk
2 eggs
Really very simple and they are indistinguishable from regular flour crepes!

All of this AND it’s Gluten-free?
I mainly go for the sugar free stuff because of my weak digestive system. But I have a roomate who’s Celiac and can’t have Gluten, so I think I’m going to have to pass this on to him! He’ll find it super useful!
