Ingredients

  • 1 large egg
  • 3/4 cup packed light brown sugar
  • 1 cup carrot/apple fiber from juicer (leftover from 2 large carrots and 1 med/large apple)
  • 1/3 cup vegetable oil (I use canola)
  • 1/2 cup orange juice
  • 1 teaspoon vanilla extract
  • 1/2 cup raisins, other dried fruit or chopped nuts
  • 1 1/2 cups all-purpose or white whole wheat flour
  • 1/2 cup oats
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt

Carrot Apple Fiber Muffins

Fresh homemade carrot juice just can't be beat but I've always felt a little bit badly about all the leftover fiber that goes to waste. So I decided to create a recipe for muffins that uses that up that fiber! The result was delicious and I felt like a goody-two-shoes for using the whole carrot!

MAKE IT

  1. Heat oven to 375 degrees.
  2. Grease muffin cups or use unbleached baking cups.
  3. Beat egg and sugar together in a medium bowl. Add in carrot/apple fiber, vegetable oil, orange juice and vanilla and beat until well blended. Stir in raisins.
  4. Mix flour, oats, baking powder, baking soda, cinnamon and salt together in a large bowl.
  5. Add carrot fiber mixture and fold in with a spatula until dry ingredients are just moistened.
  6. Scoop batter into muffin cups.
  7. Bake for 20 to 25 minutes or until brown on top and springy to the touch. Cool slightly before eating. Enjoy!!

CLEAN IT

Apples are on the Environmental Working Group’s Dirty Dozen list of produce with the most pesticide residues. If you can only purchase one organic ingredient, opt for organic apples.

GREEN IT

Turn off the oven a few minutes early to save energy and reduce greenhouse gas emissions.

MAKE IT FUN

Let kids help stir and scoop. The fiber mixture is delightfully goopy!
