Ingredients
We don't use a recipe but here are the basics:
- Cucumbers, peeled, cut in 1/2 and sliced
- Tomatoes, diced into bite-sized pieces
- Red pepper, diced into 1/2 inch chunks (optional)
- Red onion, small dice (just a bit for flavor, I don't like too much)
- Kalamata olives, whole or chopped
- Fresh basil, finely chopped
- Feta cheese, crumbled into bits (I like to use a lot!)
- Dressing made with olive oil, lemon juice, salt and pepper
(A true greek salad would include a dash of oregano in the dressing but I'm not a big fan.)

MAKE IT
- Toss it all in a bowl and serve!
- All you need is a loaf of crusty bread and a glass of wine and you're good to go!

Sweet red bell peppers are on the Environmental Working Group’s Dirty Dozen list of produce with the most pesticide residues. If you can only buy one organic ingredient from this recipe, choose an organic red pepper.
GREEN IT
As Micaela mentions, most of these ingredients are home gardener staples. If you don’t have a yard or garden, try growing basil in a pot. It’s super easy, smells great, and looks beautiful. And, of course, growing your own is easier on the planet! Learn how.
MAKE IT FUN
Find some authentic Greek music at the library or to stream online. Listen to it while you and your children prepare and eat this salad. What kind of instruments do you hear? Do you like the music? How might people dance to it? Have fun!
