Ingredients
- 1 cup avocado (about 1 1/2 avocados)
- 1/4 cup green bell pepper (about 1/2 pepper), seeded and chopped
- 1/4 cup red bell pepper (about 1/2 pepper), seeded and chopped
- 1/4 cup tomato (about 1/2 small tomato), seeded
- 1/3 cup cilantro, chopped
- 1 scallion, chopped
- 1/4 cup olive oil
- 1 tablespoon fresh lime juice (about 1/2 lime)
- 1/8 teaspoon sea salt
- fresh ground pepper
Guasacaca
My very dear friend, Lilian Elias, was gracious enough to contribute her recipe for Guasacaca, a salsa-like condiment from Venezuela that is usually served with meats or salads, but can also be used for dipping with pita, bread, or vegetables. Alina loves avocados, so this snack has been a huge hit.

MAKE IT
Using a food processor or hand blender, combine all ingredients and blend until smooth, about 2 minutes. The mixture should have the consistency of creamy peanut butter.
CLEAN IT
Since Red and Green Bell Peppers are on the dirty dozen list – go Organic!
GREEN IT
Consider starting a small herb garden in some pots and add Cilantro to the mix! (So fragrant!)
MAKE IT FUN
Baby: Next time you are shopping with your baby and are strolling down the produce aisle, take a minute and stop and smell the herbs! Remember food is multi-sensory, so from the very beginning, let them make the connection that food has a smell/aroma as well as taste!
Tot: If using a food processor have them press start and stop – sounds mundane to you and me, but they will think it is so cool…trust me!
