Ingredients

  • 6 cubes HAPPYFAMILY Thank You Carrots, defrosted
  • 6 cubes HAPPYFAMILY Sweeter Apples, defrosted
  • ½ cup of brown sugar
  • 3 eggs
  • ½ cup milk
  • 1 tsp vanilla
  • 1 tsp baking soda
  • ½ tsp baking powder
  • 1/8 tsp salt
  • 1 tsp ground cinnamon
  • ½ tsp ground ginger
  • ½ tsp nutmeg
  • 1 cup unbleached white flour
  • ½ cup HAPPYBELLIES Multi-grain

Healthy Apple Carrot Spice Cake

Make It:

1. In large bowl, mix apples, carrots, sugar, and vanilla. Add beaten eggs and milk.

2. In a separate bowl, mix baking soda, baking powder, salt, cinnamon, ginger, nutmeg, flour, and Bellies. Pour into liquid mixture and mix well.

3. Pour into prepared greased and floured 6-cup Bundt pan. Bake 40-45 minutes or until toothpick inserted into the cake comes out clean. Remove from Bundt pan and allow to cool.

Note: Can be sprinkled lightly with powdered sugar or topped with our Veggie Cream Cheese spread.

Clean It:

Be sure to avoid Teflon pans when baking, as harmful chemicals are known to leach into your food. Visit Green Cooking Pots for chemical-free cast iron pots and pans!

Green It:

Choose a less processed sugar, such as raw or turbinado, instead of granulated “white” sugar. Less processing saves valuable resources.

Make It Fun:

Add in any other fruits or nuts that your child loves, such as raisins or almonds.

I have to say, this recipe really disappoints me. It looks fantastic, but apples and carrots are some of the few local fresh foods you can get all year in colder climates, and here they don't allow you to use them because you have to use this Happy Family product. They could have at least included the weight value, so you could substitute. I won't make the recipe as a result, because I'm not going to go out and buy prepackaged what I can get directly from my local farmer.
