Ingredients
- 1 cup chick peas (garbanzo beans)
- 1-1/2 tablespoons tahini (sesame butter)
- 2 tablespoons fresh lemon juice
- 1 teaspoon raw garlic, minced (about 1 clove)

- 1/4 teaspoon fresh cracked pepper
- 2 teaspoon olive oil
- 4 whole wheat, oat or gluten-free pita
- 1 cup fresh romaine lettuce, chopped
- 1/2 cucumber, sliced
- 1 tomato, sliced

Homemade Hummus Pita Pockets
Tired of worrying about what to eat for lunch? These Hummus Pita Pockets are a vegetarian alternative to processed lunch meats and cheeses. Have fun, mix it up and add any toppings you like!

Make It:
Get your food processor out for this one! For this recipe, you can either use dry chickpeas (or garbanzo beans) or you can use the canned variety (if you opt for canned, make sure they are low in sodium and organic!).
1. If you have dry beans, soak them in water about 6 times the volume of your beans and sort through them to make sure there are no pebbles mixed in. Let them soak overnight and the next day, drain them and boil in a stockpot for about an hour and a half (but keep an eye on them, sometimes they cook faster than expected).
2. In the food processor, puree boiled chick peas through olive oil until the mixture has reached a smooth, creamy consistency. If the hummus looks too thick, add more olive oil (or water) a little at a time.
3. Slice your pita in half, smear hummus on the inside and add fresh veggies!
Clean it:
Buy your chickpeas dry and soak them overnight to reduce your exposure to BPA found in canned varieties. In addition, you are saving money, reducing your salt intake and in my opinion having a much tastier bean!
Green it:
Buying chickpeas (or any bean) dry and cooking them yourself also has a positive impact on the environment, using less packaging and less energy to processes them.
Make it Fun:
I will always emphasize this, but make it your own! This is just a basic hummus recipe, but get as creative as you want with it, add some of your favorite roasted veggies (eggplant, red peppers, onion, garlic, even sweet potatoes), fresh herbs and even toasted nuts. You can have a hummus party with all the varieties and vote on which one turned out the best!
