Ingredients
- 1 15-oz. can black bean
- 1 15-oz. can kidney beans
- 1 15-oz. can small white beans
- 1 15-oz. can small red beans
- 6 scallions, sliced thin
- 1 green bell pepper, seeded and slivered
- 6 oz. of organic shredded mozzarella
Vinaigrette:
- 1 cup olive oil
- /4 cup red wine vinegar
- 1 tsp. salt
- 1 Tbsp. fresh thyme leaves
- 1/4 tsp. dried mustard
- 1/4 tsp. freshly ground pepper
- 1/4 cup grapefruit juice
Garnish:
- 1/2 cup organic parmesan cheese
- 1/4 cup chopped parsley

Make It:
1. Drain and rinse beans.
2. In large bowl, combine beans, scallion slices and green pepper slivers.
3. Add shredded cheese and toss lightly.
4. Mix dressing ingredients and pour over bean mixture.
5. Sprinkle with parmesan and chopped parsley.
