MAKE IT
1. Break up soba noodles as you drop them into the boiling water and cook noodles according to package.
2. Drain and set aside.
3. Prepare the green beans by trimming the ends and cut on bias to 1 inch length.
4. Steam the green beans for 10 minutes (longer to get them soft if you are going to puree for baby)
5. In a large pan or wok, heat oil on medium heat.
6. Add garlic and ginger sautéing for 1 minute.
7. Add toasted sesame oil and soy sauce, stir for 30 seconds.
8. Add in green beans and stir until coated
9. If adding noodles – add in cooked noodles at the end.
10. Toss to combine.
CLEAN IT
Although green beans are not on the “Dirty Dozen” list they are #16 so I would choose Organic for my kids
GREEN IT
Since over 90% of all Soy Beans grown here in the US are GM (Genetically Modified) – the only way to assure that your Soy Sauce does not have GM Soy is to choose Organic Soy Sauce. Under the current USDA Organic certification guidelines – the use of GM organisms are banned.
MAKE IT FUN
Baby: Have them smell the fresh ginger and garlic
Tots: Snapping green bean ends is a simple and fun way to get your tot in the kitchen!
