MAKE IT

Preparation:

  1. Crumble tempeh with hands and steam in a pot for 15 minutes. When done, place cooked tempeh in a large bowl and allow to cool.
  2. Once tempeh has cooled completely mash with a fork to make smaller crumbles.
  3. Add remaining ingredients and mix well. If mixture is too dry feel free to add more mayonnaise & mustard.
  4. Serve this delicious updated classic over a bed of greens, as a sandwich on whole grain bread, or in pita pocket bread. Also great served as an appetizer with whole grain crackers or lettuce cups. Trust me, this vegan dish will have you hooked and wanting more.

*Tempeh, originating in Indonesia, is made from cooked and fermented soybeans that are formed into firm patties much like a veggie burger. Since it is made from whole soybeans, it is a complete protein food that contains all the essential amino acids. It is also a generous source of minerals, soy iso-flavones, calcium, B vitamins and iron. Tempeh is a naturally cholesterol-free food (as are all plant-based foods) and is more digestible than other soy products due to the enzymes created during the fermentation process.

CLEAN IT

Conventionally-grown celery has some of the highest levels of pesticide residue. For this recipe, prioritize buying organic celery.

GREEN IT

When bringing water to a boil, remember to keep a lid on the pan. The water will come to a boil faster, reducing your use of energy.

MAKE IT FUN

Kids love helping mash the tempeh!
