Ingredients

  • 1 cup dry quinoa
  • 2 cups water
  • 8 ounces frozen spinach, defrosted and drained
  • 1 cup sweet potato, diced
  • 1 cup carrot, diced
  • 4 cups low sodium vegetable broth
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon sea salt
  • fresh ground pepper to taste
  • 4 oz goat cheese, crumbled

Quinoa with Spinach, Sweet Potatoes and Goat Cheese

Quinoa, was originally cultivated by the Incas. Go ahead and eat as much quinoa as you can. A super healthy food, it is rich in protein and fiber, and is gluten-free. Babies will love the taste of sweet potatoes and carrots in this dish and everyone will savor the creamy finish of the goat cheese.

MAKE IT

1. Soak quinoa in water for 15 minutes.

2. Rinse quinoa in a fine strainer until the water runs clear.

3. Bring quinoa and water to a boil. Cover and reduce to simmer.

4. Cook for 15 minutes.

5. In a large saucepan, combine spinach, sweet potato, carrots, vegetable broth, nutmeg, salt, and pepper.

6. Bring to a boil, cover pan and reduce heat to low and simmer for 15-20 minutes until sweet potatoes and carrots are tender.

7. Gently fold quinoa into vegetables.

8. Serve as is and garnish with goat cheese or puree them together for younger babies.

Support your local farmer - Look for a local pasture raised goat source for your goat cheese.

MAKE IT FUN

Have your little one help garnish each bowl with some of the goat cheese crumbles. Explain what food presentation is – teach them that making food look good is just as important as making it taste good. (The lesson is building the foundation that food is multisensory and they can begin to learn that food/cooking is a creative form of expression.)
