Ingredients
- 3 red Roma tomatoes
- 2 green tomatoes
- ½ bunch of scallions, sliced in long pieces
- 2 pinches of pepper
- olive oil for drizzling
- 1 cup feta cheese
- 1 avocado, chopped into pieces
- 8 corn tortillas
Roasted Tomato Garden Tacos
Who said you need meat in your tacos? These tacos contain no meat and are super delicious and addictive!

MAKE IT
- Pre-heat oven to 350 degrees.
- Place both green and red tomatoes slices, along with the scallions in a ceramic dish and drizzle with olive oil, and season with pepper.
- Roast these veggies for 15-20 minutes until softened.
- Either on an open flame, or with a Mexican tortilla warmer plate, heat up corn tortillas until browned.
- Assemble tacos with roasted tomatoes, scallions, feta cheese, and avocado.
- Serve warm with a little hot sauce! These are addictive so be prepared to make a ton of them!

Most conventional corn is genetically modified, so opt for organic corn tortillas in this recipe if you can. Learn about the health risks of genetically modified foods.

Skip pre-heating and keep the veggies in the oven a little longer with the door closed to save energy.
