Ingredients
- 1/2 medium tomato
- 1/4 green bell pepper, seeded
- 1/4 red bell pepper, seeded
- 2 large garlic cloves
- 1/4 onion
- 1/2 bunch of cilantro
- 1/4 bunch of oregano
- 1 – 3 tablespoons extra virgin olive oil
Sofrito
Sofrito is the base used in virtually all Puerto Rican cooking, similar to the mirepoix used in France and the soffritto used in Italy. It's not to be eaten by itself. Traditionally, sofrito is made with recao and aji dulce. These 2 ingredients may be hard to find so I created a version without them

MAKE IT
1. Combine all ingredients in a blender or food processor fitted with a steel blade.
2. Blend until the mixture is smooth.
3. Adding the extra virgin olive oil, as needed to incorporate the ingredients
4. Once made, freeze your Sofrito in ice cube trays and save it to use in other Puerto Rican recipes, such as the Puerto Rican Rice and Beans. It will be a huge convenience and will pack an authentic punch to your cooking that your family will savor.

MAKE IT FUN
Baby: Have them smell herbs and the aroma after it is all blended
Tots: After Sofrito is frozen – have them help you pop them out of the ice cube trays. When using a food processor or blender, have them press start and stop – sounds mundane to you and me, but they will think it is so cool…trust me!
