Ingredients
- 1 15-ounce can pumpkin
- 1/2 cup flour
- 1 egg, beaten
- 3 tablespoons sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 tablespoons butter
- 2 tablespoons vegetable oil
- 1/2 teaspoon ground cinnamon
South African Pumpkin Fritters
Pumpkin isn't just for Halloween! This low calorie vegetable is very high in fiber and Vitamin A.

Make It
In large bowl, combine pumpkin, flour, egg, 1 tablespoon sugar, baking powder and salt.
Heat 1 tablespoon butter and 1 tablespoon oil in a large skillet over medium heat.
Drop spoonfuls of mixture into pan and lightly flatten with a spatula. Cook until golden, about 4 minutes per side. Cook in two batches.
In small bowl, combine remaining sugar with cinnamon and sprinkle over hot fritters before serving.
Clean It
Look for organic canned pumpkin to avoid any unwanted additives.
Green It
Leftover pumpkin? Heat up the rest with a little butter, cinnamon and nutmeg for a warm afternoon snack.
Make It Fun
Geography lesson: Get out a globe or map and have your children identify the country of South Africa.
