Ingredients
- Juice of 1 lemon
- Grated lemon rind
- 1/4 cup olive oil
- 1 teaspoon fresh ground pepper
- 1-2 garlic gloves, crushed
- 1 tablespoon honey
- Saffron (optional)
Summer Marinade
Marinating with lemon & olive oil decreases Heterocyclic Amines (HCAs), chemicals produced by the grilling of meat that may be harmful to human health.

Make It:
Mix all of the ingredients together. Use marinade on chicken, fish, tofu, or whatever you dream up!
Clean It:
Other ways to decrease HCAs is to grill veggies instead of meat, avoid burning/charring meat, or to opt for beef or fish on the grill (chicken has been shown to produce 2-7 times the amount of HCAs).
Green It:
Try this marinade on organic mushrooms, pineapple, zucchini, and onions to lower your carbon footprint.
Make It Fun:
Kids can help turn the pepper, stir the ingredients, and squeeze the lemon!
