Servings: Makes about 2 cups

Ingredients

  • 7 carrots, peeled and roughly chopped
  • 1/8 cup fresh tarragon, chopped
  • 1/2 cup water

Tarragon Carrots

Carrots are super sweet when pureed, and I added tarragon, an herb typically used in French cooking, which only enhances its naturally sweet flavor. Babies, quite simply, adore their carrots!

MAKE IT

1. Steam carrots for approximately 10-15 minutes, until fork tender.

2. Using a hand blender, food processor fitted with steel blade or food mill puree carrots, tarragon, and 1/4 cup water.

3. Continue to blend, adding in remaining water as necessary. For older babies, use less water and do not puree as finely.

4. Leave carrots whole for the entire family to enjoy as a delicate, naturally sweet side dish!

CLEAN IT

Even though carrots are not on the dirty dozen list, I would still recommend going organic with them (psst – they are #15).

GREEN IT

Try buying your organic carrots in the loose bin at the store, or better yet, at a farmers market. Also, help save the environment by eliminating the plastic bag most carrots come in…remember to bring your own bag from home.

MAKE IT FUN

Babies: Have them touch and hold the carrots before cooking and pureeing. Let them see the beautiful orange color and feel its texture.

Tots: Let them pick out the carrots from the bin/farmers market, then help them peel and, dare I say, help chop the carrots! Yes, you help them, but get them involved in as many steps as possible. If you want to see your child’s self-esteem shoot through the roof, let them help!

General: Pick some fun heirloom carrot variety like rainbow carrots where you get orange, red, purple and stripped varieties.
