Ingredients
- 1/2 cup onions, small diced
- 1/4 cup carrots, shredded
- 1 teaspoon garlic, minced
- 1 Tablespoon canola oil
- 3 pounds turkey, ground
- 1 teaspoon parsley, chopped
- 1/2 cup Japanese (Panko) bread crumbs
- 3 eggs
- 1 teaspoon salt kosher
- 1/4 teaspoon freshly ground black pepper
- 3 Tablespoons ketchup
Turkey Meatloaf
This recipe is made it with ground turkey meat instead of ground beef, which lowers the saturated fat content of the meal, and if you follow this recipe you won’t end up with a dried out piece of shoe leather.

Make It:
1. Preheat oven to 350 degrees. Prepare loaf pan.
2. Saute onions, garlic, and carrots in oil until soft. Remove from heat and allow to cool slightly before transferring to a separate bowl.
3. Combine the sautéed ingredients with the turkey, parsley, bread crumbs, eggs, salt, and pepper and mix well.
4. Pack meat into prepared loaf pan, coat top with ketchup, and bake to an internal temperature of 140 degrees.
Clean It
Ketchup can have very high levels of artificial sugar when bought conventionally. Go for the organic version, which often includes more lycopene and antioxidants.
Green It
Think Thanksgiving! Use leftover turkey meatloaf to make delicious next day sandwiches for work or school lunches.
Make It Fun
Let the kids use their hands (washed before and after!) to mix up and mash together the ingredients in Step 3.
